Stuffed Peppers

Homemade Stuffed Peppers are Paleo AND easy to make. Great for large families on a budget with picky eaters. Go stuff your peppers!

  • 1/2 lb Spicy Italian Sausage
  • 1/2 lb Ground Beef
  • 6 oz. Tomato Paste
  • 6 oz. Mushrooms - diced
  • 4 Bell Peppers
  • 3 Cloves Garlic - minced
  • 1 Zucchini - diced
  • 1 Onion - diced


  • Cut heads off of peppers and cut lengthwise down the middle. You should have eight halved peppers total.
  • Bring a large pot of water to a raging boil. Carefully place pepper halves in water. Boil for 10 minutes. Remove from water and place on a foil-lined edged baking sheet. Salt and pepper to taste.
  • Preheat oven to 350. In a large skillet place beef, sausage, and chopped vegetables over medium-high heat. Cook until meat is brown. Drain fat.
  • Add tomato paste and stir until everything is evenly coated. Carefully fill peppers with your meat and vegetable mix. Bake for 25 minutes.
