Mashed Parsnips

Homemade Mashed Parsnips are Paleo, Vegan, AND easy to make. Great as a side dish or the base of your recipe. Better than mashed potatoes.

  • Fill a medium-sized saucepan with water and bring to a boil. 
  • Wash, peel, and cut parsnips into one-inch chunks.
  • Add parsnips to boiling water and cook for twenty minutes.
  • Drain and cool a little bit before placing into the food processor. Add coconut milk, salt, and pepper to taste. Blend until creamy.

Notes

  • Double to recipe for more servings or larger families.
