Low Carb Egg Wraps

These low carb egg wraps contain only eggs and are perfect for those who are following a low carb diet and looking to avoid processed foods.

Equipment

  • 8-inch skillet

Ingredients

  • 1 teaspoon bacon lard
  • 2 large eggs

Instructions

  • Heat bacon lard in an 8-inch skillet over medium-high heat for 3 minutes or until the oil starts to shimmer.
  • In a small bowl, whisk eggs.
  • Pour whisked eggs into the skillet and gently title the skillet back and forth until the eggs are evenly dispersed in the pan.
  • Optional: season with sea salt and black pepper or any other desired seasonings.
  • Cook eggs for 2 minutes or until the egg is no longer visibly runny.
  • Carefully flip the egg with a spatula (without breaking) and cook for an additional 2 minutes or until firm
  • Transfer the egg to a plate and layer with all your favorite toppings and roll up like a wrap!

Notes

  • bacon lard can be swapped out for equal parts of avocado or coconut oil. Bacon lard is my preferred fat to cook with because it is temperature stable and has a high smoke point while adding extra healthy saturated fats to the wrap.
