Ingredients

  • 8 Large Eggs
  • 1/3 cup non-dairy milk
  • 1/2 Green Pepper Chopped
  • 1/2 Onion Chopped
  • 4 Mushrooms Chopped

Instructions

  • Preheat oven to 350. Use a muffin pan and place muffin cups into each compartment.
  • In a small bowl whisk together your eggs. Add vegetables.
  • Pour egg mixture into muffin cups about 2/3 of the way. Salt and pepper to taste.
  • Bake for 30 minutes. Let cool in pan.
