Paleo Breakfast Egg Muffins

Servings 6 Muffins
- 8 Large Eggs
- 1/3 cup non-dairy milk
- 1/2 Green Pepper Chopped
- 1/2 Onion Chopped
- 4 Mushrooms Chopped
Preheat oven to 350. Use a muffin pan and place muffin cups into each compartment.
In a small bowl whisk together your eggs. Add vegetables.
Pour egg mixture into muffin cups about 2/3 of the way. Salt and pepper to taste.
Bake for 30 minutes. Let cool in pan.
