Herb Pork Chops and Butternut Squash

  • Preheat oven to 425
  • Line an edged baking sheet with tin foil and put an oven-safe rack on top. Place pork chops on top and salt and pepper to taste.
  • In a small bowl whisk together mustard and apple juice and put off to the side.
  • Wash and peel the butternut squash and cut into 1-inch pieces. Place squash and sliced onions into a large bowl.
  • Brush mixture on the tops of the pork chops and pour the rest into your large bowl with the squash. Sprinkle one teaspoon herbes de Provence, salt, and pepper into the bowl and give it a good stir until everything is evenly coated.
  • Sprinkle the rest of the herbes de Provence evenly between all pork chops.
  • Pour the contents from your bowl around the pork chops.
  • Bake for 20-25 minutes or until your pork chops are around 150.

Make EASY homemade herbes de Provence by combining:
For this recipe I would mix one teaspoon of each.
