Ingredients

Instructions

  • Heat EVOO in a large skillet over medium heat.
  • Add garlic, onions, and bell pepper and cook down until onions become soft to touch.
  • Toss in mushrooms and spinach and stir together.
  • Add tomato sauce, paste, oregano, pepper, and salt to taste. Bring to a boil, cover, and simmer over low heat for 30-45 minutes.

Notes

  • Top over your spiralized 'noodles,' chicken, or use in your Paleo lasagna
  • If you like your sauce more on the runnier side add in a can of diced tomatoes or add more tomato sauce
  • Sneak vegetables into your kid's meal by blending sauce after cooling
