Fried Paleo Zucchini Slices

Fried Paleo Zucchini Slices are easy to make AND Paleo. This appetizer is made with minimal healthy ingredients and is excellent for any event or party.

  • Heat skillet over medium-high heat and add enough avocado oil to fill the bottom of your skillet.
  • Whisk egg in one bowl and place birch benders mix into another bowl.
  • Wash and slice your zucchini into slices.
  • Place zucchini slices into egg and then coat evenly into the mix.
  • Carefully place zucchini slices into skillet without overlap. Fry for 3 minutes and then flip for an additional 3 minutes.
  • Remove from skillet and place onto a paper towel. Allow excess oil to drip off and cool before eating.
