Optional: 1/4 Cup chopped walnuts

    Instructions

    • Preheat oven to 350 and line your muffin pan with parchment cups.
    • In one bowl mash your bananas then stir in whisked egg and vanilla.
    • In another bowl mix all your dry ingredients together. Make sure there is no clumps!
    • Slowly pour your dry ingredients into your mashed banana mixture. Stir until everything is evenly combined.

    Optional: Fold in chopped walnuts at this time.

    • Fill your muffin cups 2/3 of the way and bake for 20-22 minutes, or until toothpick comes out clear.

    Notes

    • Allow your muffins to cool completely in the muffin pan before removing. Once removed, place them onto a wire rack until ready to eat or store.
