Italian Paleo Quiche

Homemade Italian Paleo Quiche that is Paleo, simple AND easy to make. Hidden under the egg and vegetable filling is an Italian "crusted" layer.

Ingredients

  • 8 large eggs
  • 8 oz. mild or spicy Italian sausage
  • 1/2 finely chopped onion
  • 1/2 finely chopped red pepper
  • 4 finely chopped mushrooms
  • 1 teaspoon baking soda

Instructions

  • Preheat oven to 350.
  • Knead Italian sausage into the bottom of a pie dish.
  • Bake for 25 minutes. (Italian sausage will shrink down)
  • Let cool.
  • In a large bowl whisk eggs and baking soda.
  • Add in chopped vegetables.
  • Pour on top of cooled and baked Italian sausage.
  • Salt and pepper to taste.
  • Bake for 30 minutes.

Notes

  • If you do not have Italian Sausage on hand you can replace it with other meat or skip it and the steps that its included in.
