Sweet Potato Toast

Homemade Sweet Potato Toast is Paleo, Vegan, AND easy to make. It is loaded with flavor, nutrients, and your choice of healthy toppings.

  • 1 sweet potato


  • Preheat oven to 425.
  • Wash sweet potato and peel if desired.
  • Carefully slice the sweet potato into 1/4 inch slices with a mandoline.
  • Place sweet potato slices on an oven-safe wire rack on top of a baking sheet. (Place a piece of parchment paper between both of them if you are worried about a mess). 
  • Spray the top side with coconut oil. Salt and pepper if desired.
  • Cook 10-14 minutes.
  • Carefully remove with tongs from rack and place on a plate. Top with your desired ingredients.
