Homemade Roasted Beets that are Paleo, Vegan, AND easy to make. With minimal ingredients and minimal work, these make an excellent side to any dish.

Instructions

  • Preheat oven to 350 and line an edged baking sheet with parchment paper.
  • Wash, peel, and slice beets into 1/4 inch rounds. {You may also cut your rounds into crescent shapes by cutting them in half}.
  • Place beets into a large bowl with EVOO, salt, and pepper. Coat beets evenly and pour onto your prepared baking sheet with minimal overlap.
  • Bake for 30-35 minutes.

Notes

  • Replace olive oil with coconut oil or sautee in bacon grease, lard, or tallow.
  • If salt and pepper is lacking or too much for your taste, adjust as needed.
