Hi, Mama! I’ve noticed a lot of companies making Paleo ice cream lately {about time, right?}. In theory, this is awesome as we actually have a healthy option in the frozen department, but my wallet says otherwise. I’m sure you agree with me that purchasing an eight dollar pint of Paleo ice cream seems a little outlandish. So for two dollars, I made a Paleo Vanilla Coconut Ice Cream in the luxury of my own home.

I avoided dragging my kids to the grocery store, loading and unloading them from their car seats in Wisconsin’s unpredictable weather, AND I saved a bunch of money {and my sanity- well, whats left of it}.

I’ll be honest, I’ve bought a pint of eight dollar Paleo ice cream before. Yes, it was good and totally hit the spot to tame my chocolate craving during that ‘time of the month,’ but it tastes nothing like a homemade Vanilla Coconut Ice Cream.

Just as I get cravings during ‘that time of the month,’ my husband also gets them after a long stressful day at work. If you ask me, everyone should end the day with a frozen Paleo treat. I think there would be a lot more happier people walking around.

Anyways, our ice cream maker broke, I entirely blame my children, but I’m all for honesty here, and I am the guilty one of dropping it on the floor. Oops.

Of course, my husband requested ice cream after his stressful workday, and without having to throw myself under the bus, I had to come up with a new way to prepare and freeze his evening treat.

Instead of throwing {wow, I do a lot of throwing} everything into the ice cream maker I whipped my ingredients in a large bowl and placed the ready product into a freezer safe glass dish and crossed my fingers.

Paleo Dessert Vanilla Coconut Ice Cream

Well, it worked.

Unfortunately, the freeze time took a little longer than we were willing to stay up, so we enjoyed our Vanilla Coconut Ice Cream the following day. As an apology, I made my husband some Mini Paleo Chocolate Cups instead.

Moral of the story: the best things in life are worth waiting for… like the toilet.

How to Make Vanilla Coconut Ice Cream with an Ice Cream Maker

  1. Place coconut milk, maple syrup, vanilla, and lime into a large mixing bowl.

  2. Use a hand mixer and beat ingredients together for 30 seconds.

  3. Place combined ice cream ingredients into a freezer safe bowl and freeze for a minimum of three hours.

Top with your favorite Paleo toppings:

  1. Place coconut milk, maple syrup, vanilla, and lime into a large mixing bowl.

  2. Use a hand mixer and beat ingredients together for 30 seconds.

  3. Place combined ice cream ingredients into a freezer safe bowl and freeze for a minimum of three hours.

Recipe Notes

  • Add more maple syrup for a sweeter taste
  • Skip the wait time and invest in an ice cream maker. Follow the same instructions without the freezer
  • Lime juice is not necessary but helps cut the coconut flavor
