I really love my stuffed pepper recipe but with this cold Wisconsin weather I’ve been getting a tad lazy in the kitchen. With my stuffed pepper craving in full gear, I decided to do something a little different.

OMG, this recipe is to die for. Well, not really, but both my kids had seconds and even ate leftovers the next day for lunch.


This Unstuffed Peppers Crockpot recipe is an excellent alternative to the traditional stuffed pepper.

I call it the lazy woman’s stuffed pepper. You get everything in a stuffed pepper (including the bell pepper without cutting) in one bite!

Which makes this dish the perfect recipe for any toddler or lazy mom.

Besides my craving for a stuffed pepper, I had a few ingredients going bad that needed to be used asap. I threw them in a crockpot and came up with a Paleo Crockpot Unstuffed Peppers Meal.

If you know me, I am very frugal. There, I said it. I’m not embarrassed at by it either, my husband on the other hand…

Whether he says it or not, he is embarrassed by my frugal tendencies.

When I first started making this recipe, I was going to make my Simple Homemade Paleo Chili, but as I started throwing the ingredients in the crockpot, I decided I’m going to create something new tonight.

Which can either go one way or the other and thankfully it went in the direction I was hoping for.

Not only is this Unstuffed Peppers recipe prepared in five minutes but you can forget all about it as it cooks for itself. (YES!)
