How to Make A Two Minute Paleo Chocolate Cake
1. In an 8-ounce or larger coffee mug or bowl, combine almond flour, cacao powder, coconut sugar, and sea salt.
2. Whisk in avocado oil, egg, and vanilla. Fold in chocolate chips.
3. Microwave for 1 minute and 30 seconds or until the cake has risen and the middle is fully cooked.
4. Carefully remove from the microwave and cool before serving.
How to Store A Two Minute Paleo Chocolate Cake
It’s unlikely you’ll have leftovers, but if you do, cover and place into the refrigerator for up to 24 hours for optimal freshness. When ready to eat, reheat in the microwave for 20 to 30 seconds or until warm to touch.

Basic Staples for Making A Two Minute Paleo Chocolate Cake
Almond Flour – For this recipe, I used blanched almond flour and found that it gives this cake the best texture and taste when compared to other alternative Paleo flours.
Cacao Powder (Unsweetened) – Cacao powder is made by cold-pressing unroasted cacao beans – leaving all the living enzymes and nutrients in place. Which is very different than cocoa powder. Cocoa powder is roasted at high temperatures that change the molecular structure, which lowers the nutrient value.
Coconut Sugar – Coconut sugar is the perfect refined sugar replacement because it offers some nutrients but also has a lower glycemic index!
Avocado Oil – When it comes to baked goods, I love using avocado oil because of its smooth texture and mild flavor. If you prefer, you can swap out avocado oil with equal parts of coconut oil or your preferred oil.
Egg – Local or pasture-raised eggs are best.
Vanilla – Save money by making a homemade vanilla extract with my favorite recipe: Paleo Vanilla Extract.
