Triple Threat Paleo Chocolate Cookies

Paleo, Gluten-Free, Allergy-Friendly

 

Hi, Mama! Just because you are Paleo does not mean you have to ditch the baked goods. Eating healthy Paleo-friendly alternatives to grains, refined sugars, and dairy will prevent bloat, insulin resistance, and weight gain.

 

While these alternatives are healthful, you will most definitely want to eat these triple threat Paleo chocolate cookies in moderation, {but good luck with that}.

 

My husband has a major sweet tooth {as do I}, and a love for baking {as do I}.

 

I’m starting to think as the years go on if in fact we were really meant to be?

 

My only rule when it comes to his secret baking ‘hobby’ is that it absolutely needs to be Paleo. Somehow he managed to make one of my favorite cookies healthy, yet irresistibly delicious. Triple Threat Chocolate PALEO Cookies

Ingredients

  • 4 oz Paleo Chocolate Bar or use chocolate chips
  • 2/3 Cup Coconut Flour
  • 3/4 Cup Arrowroot
  • 1/3 Cup Cacao Powder
  • 3/4 Cup Coconut Sugar
  • 1/2 Cup Coconut Oil
  • 2 Cups Large Chocolate Chips or chocolate chunks
  • 1 Egg
  • 2 TSP Vanilla Extract
  • 1 1/8 TSP Baking Soda
  • 1/2 TSP Salt

Instructions

  1. Heat oven to 325. Line three baking sheet with parchment paper. {Or do one sheet at a time}.

  2. Place chocolate bar {or chips} in a small glass bowl. Microwave one minute, stir until smooth and set aside.

  3. In a medium bowl, whisk flour, cacao powder, baking soda, and salt.

  4. In a large bowl use a mixer and beat coconut oil until smooth. Add in coconut sugar and beat on medium-high speed for three minutes while occasionally scraping down the sides of the bowl.

  5. Add egg and beat for an additional three minutes.

  6. Stir in vanilla and melted chocolate. On low-speed beat in flour mixture.

  7. Fold in chocolate chips {or chunks}.

  8. Scope up the batter into two heaping tablespoons and roll into a ball between your hands. Place cookie on the prepared baking sheet and flatten slightly with your hand.

  9. Bake cookies in batches for 14 minutes each or until cookies crack. Cool on pan for 2 minutes before transferring to a wire rack.
