My only rule when it comes to his secret baking ‘hobby’ is that it absolutely needs to be Paleo. Somehow he managed to make one of my favorite cookies healthy, yet irresistibly delicious. Triple Threat Chocolate Paleo Cookies
A rich chocolatey cookie to curve any sweet tooth.
Ingredients
- 4 oz Paleo Chocolate Bar
- 2/3 Cup Coconut Flour
- 3/4 Cup Arrowroot
- 1/3 Cup Cacao Powder
- 3/4 Cup Coconut Sugar
- 1/2 Cup Coconut Oil
- 2 Cups Large Chocolate Chips
- 1 Egg
- 2 TSP Vanilla Extract
- 1 1/8 TSP Baking Soda
- 1/2 TSP Salt
Instructions

Heat oven to 325. Line two baking sheets with parchment paper.

Place chocolate bar in a small glass bowl. Microwave one minute, stir until smooth and set aside.

In a medium bowl, whisk coconut flour, arrowroot, cacao powder, baking soda, and salt together.

In a large bowl use a hand mixer and beat coconut oil until smooth. Add in coconut sugar and beat on medium-high speed for three minutes while occasionally scraping down the sides of the bowl.

Add egg and beat for an additional three minutes.

Fold in chocolate chips {or chunks}.

Scope up the batter into two heaping tablespoons and roll into a ball between your hands. Place cookie on the prepared baking sheet and flatten slightly with your hand.

Bake cookies in batches for 14 minutes each or until cookies crack. Cool on pan for two minutes before transferring to a wire rack.
Recipe Notes
Modifications
- If you do not have any Paleo chocolate bars on hand use four ounces of Paleo chocolate chips or chunks; such as Enjoy Life's Chocolate Chips and Chunks.
- Any mixer works such as a KitchenAid if a hand mixer is absent.
