Triple Chocolate Paleo Cookies

Just because you are on a Paleo diet doesn’t mean you have to ditch the baked goods (unless you are looking to lose weight)! Curb all your chocolate cravings with this intense mouth full of chocolate combined into one cookie!

These chocolate cookies are made with a coconut and arrowroot flour base (similar to my Paleo chocolate chip cookies) for those who suffer from tree nut allergies. These two flours make an excellent alternative to not only wheat flours but also tree nut-based flours like almond or pecan. You can use your favorite egg substitute and make this recipe 100% allergy-free!

Eating healthy Paleo-friendly alternatives like the ones featured in this recipe can help manage the bloat, insulin resistance, and weight gain that comes with eating inflammatory foods (grains, refined sugar, dairy, PUFAs, etc.). While these alternatives are healthful, you will most definitely want to eat these triple chocolate cookies in moderation (but seriously good luck with that). 😉

How to Make Triple Chocolate Paleo Cookies

1. Preheat the oven to 325 degrees. Line baking sheet with parchment paper. Set aside.

2. Place chocolate bar in a small glass microwavable bowl and microwave in 15-second increments for 60 seconds or until chocolate has melted, stir chocolate after each increment. Carefully remove the bowl from the microwave and set aside.

3. In a medium bowl, combine coconut flour, arrowroot flour, cacao powder, baking soda, and sea salt.

4. In a large bowl cream coconut oil and coconut sugar on high with a hand mixer for 1 minute or until smooth. Next, beat in the egg for 10 seconds or until well incorporated.

5. Stir in the vanilla and melted chocolate from step 2 and then add in the dry ingredients from step 3 with a hand mixer on low speed for 1 minute or until a batter has formed.

6. Fold in the chocolate chips (add more if desired) and then scoop the batter into 1 to 2 heaping tablespoons and roll into a ball between your hands. Place the cookie onto the prepared baking sheet and press down slightly with your hand. Repeat.

7. Bake in the preheated oven for 12 to 14 minutes or until the tops of the cookies start to crack. Cool cookies on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.

Cookies can be stored in an airtight container or resealable bag on the counter for 3 to 5 days.

Baking Sheet – I love my baking sheets, there is plenty of room and they are easy to clean. (Especially when topped with parchment paper or a silicone mat)!

Hand Mixer – A hand mixer is used to combine all ingredients in one bowl for less mess! Hand mixers are amazing because they get the job done but don’t take up too much space for storage!

Mixing Bowls – Every home cook, whether your a beginner or expert, should have an assortment of small to large bowls to execute all your recipes!

Parchment Paper or Silicone Mat – I use these two interchangeably. They are great for easy cleanup and keeping baking sheets tidy to prevent food sticking.
