Making Sweet Potato Toast for breakfast or a snack is an excellent alternative to your traditional grain toast.

When I started my crazy, beautiful Paleo journey a year ago, I said goodbye to grains (read more here). That included everything from rice to cereal and in between.

I survived and now am substituting healthy alternatives to those traditionally processed grains. I use zucchinis for noodles, cauliflower for rice, and sweet potatoes for toast, fries, and chips.

The sweet potato itself has healthy carbohydrates, vitamins, and minerals needed to start your day off right. The added toppings turn this once side dish into a nutrient-packed breakfast.

Honestly, you can top your sweet potato with just about anything, but my three favorite toppings are:

Almond Butter

Thankfully almond butter has replaced the overly processed peanut butter that used to line our pantry shelves. It can be expensive, but it is less processed and contains many nutritional benefits.

Benefits of almond butter

  • Almond butter is a good source of the healthy monounsaturated fats our bodies need
  • Eating almonds offers antioxidant action from Vitamin E and helps lower cholesterol.
  • A small serving of almond butter contains a generous amount of magnesium
  • Eating almond butter helps keep blood sugar stable


I love bananas. They are not only loaded with potassium and other essential vitamins, but they are delicious. I never was much of a fruit person, but I always enjoyed a perfectly ripe banana; yellow with a little brown. The riper they are, the sweeter they are.

Benefits of Bananas

  • Bananas are packed with fiber, both soluble and insoluble
  • Bananas contain high amounts of potassium

Bee Pollen

Earlier this week I started incorporating bee pollen into my daily routine in many different ways, and this sweet potato toast is by far my favorite.

  • helps individuals suffering from allergies by reducing histamine levels

This Sweet Potato Toast is gluten-free, grain-free, soy-free, dairy-free, sugar-free, peanut/tree nut-free, and chemical free.

  • 1 sweet potato

Time needed: 10 minutes.

How to Make Paleo (+Vegan) Sweet Potato Toast

  1. Preheat oven to 425

  2. Wash sweet potato and peel if desired

  3. Carefully slice sweet potato into 1/4 inch slices

    Best to use a mandoline. Buy my favorite on Amazon:

  4. Slice sweet potato slices onto an oven safe wire rack on top of a baking sheet

  5. Spray the top side of the sweet potato slices with coconut oil

    Salt and pepper if desired.

  6. Cook for 10-14 minutes

Sweet Potato Toast

  • 1 sweet potato


  1. Preheat oven to 425.
  2. Wash sweet potato and peel if desired.

  3. Carefully slice the sweet potato into 1/4 inch slices with a mandoline.

  4. Place sweet potato slices on an oven-safe wire rack on top of a baking sheet. (Place a piece of parchment paper between both of them if you are worried about a mess). 

  5. Spray the top side with coconut oil. Salt and pepper if desired.

  6. Cook 10-14 minutes.

  7. Carefully remove with tongs from rack and place on a plate. Top with your desired ingredients.
