I’m always looking for ways to get my family healthy nutrient-dense meals on the go. While we try to eat our meals at the kitchen table – it’s unrealistic to be together at every meal.

Breakfast for us used to be chaotic, between my husband’s schedule, rushing my oldest to school, and dealing with a picky toddler – I was making three different meals at three different times.

Half the time my husband was left to defend himself with whatever leftovers were left over from dinner or fast until lunch where he would buy whatever fast food sounded good at the time.

While this sounds crazy, its a reality many family’s deal with daily. Since I started prepping and baking my Paleo breakfast egg bake in advance – breakfast time has gotten a whole lot easier.

Spinach Sausage Egg Bake

Last year I posted my original egg bake recipe, and after making it over a dozen times, my family got b-o-r-e-d of it. (Hey, it happens).

Truth be told, I tend to go overboard when my kids or husband ‘like’ or ‘love’ something I made and will make it again and again until they come to hate it eventually. I’m starting to think this is a ‘mom’ thing because I know other moms who do the same thing.

I see you. 😉

It’s like; “Oh my gosh, my family is finally eating something that I made!”

So, lately, I started experimenting with other ingredients that would produce new and exciting flavors for my family’s bored sophisticated palates.

Spinach Sausage Egg Bake

This past week we took our first camping trip together as a family. While our little vacation was memorable (check out the super cute photos below), I was ready to go home and sleep in my own bed and take a must needed shower. And if I’m being honest, I was prepared to leave my kids at the campsite and drive off without them by the end of our camping trip.

Before our camping trip, I wanted to prep all the food in advance to save time and not have to worry about having to wash our dishes. My mom suggested making an egg bake for a quick mess-free breakfast. Ten years ago, I would have never listened to my mother, but I took her advice on this one.

Time needed: 35 minutes.

How to Make a Paleo Spinach Sausage Egg Bake

  1. Preheat oven to 400.

  2. Line an edged 9×13 dish with parchment paper.

  3. Cut your sausage links into 1-inch pieces and place on the bottom of your pan.

  4. Disperse spinach and diced onion on top of your sausages.

  5. In a large bowl whisk eggs, nutritional yeast, milk, salt, pepper, and garlic together. Pour contents into your prepared pan.

  6. Bake in oven for 30 minutes. Remove and let rest in your pan until cool.

Tips & Tricks

  • Prepare Sunday night before the start of the busy week
  • Cut into eight pieces and wrap for on-the-go breakfasts
  • Depending on your family size you can have breakfast made in advance for 2-4 days
  • If your family is Primal disregard the nutritional yeast and add your favorite cheese. Or disregard this step altogether
