Hi, Mama! I love getting creative in the kitchen {like with this Simple Meatloaf}, but I know some recipes can be time-consuming and time is not your friend as of lately. Between work, back to school activities {the dreaded school supply shopping}, and household chores, finding time to prepare, prep, and cook dinner is a time finding battle. {Unless you are making this Simple Meatloaf}.
A few months ago I posted one of my favourite meatloaf recipes, as its delicious, it is a bit time-consuming. I heard your cry for help and decided it was time to get simple and go back to the basics.
Yes, basic is totally possible while following the principles of the Paleo lifestyle.
A lot of recipes are time-consuming because we {the creaters} feel it’s essential to provide you delicious tasting meals that taste like the “real” thing. Truth be told, we are making the real thing with real foods, unlike many Standard American Diet recipes, which we are all too familiar with.
The Standard American Diet
Unfortunately, the Standard American Diet full of grains, PUFAs, and refined sugars has left us taste blind. I’ll be honest when it started transitioning away from the Standard American Diet to a more Paleo aligned diet I wasn’t keen on eating fruits and vegetables. {My husband can confirm this}. I was used to highly processed cans and pesticide-laced produce that is meant to mask the true taste with chemicals, preservatives, and sugars.
Mama, I literally ate my vegetables doused in bacon grease just to cover up the tasteless fresh and organic produce I was now buying. It only took a week or two to realize that these tasteless organic and fresh produces I was now eating, were delicious. I slowly cut back on the bacon grease, and now I love vegetables and fruit. {I still cook my vegetables in bacon grease once and a while}.
Back to Basics
Growing up my mom would make meatloaf most weeks as it was cheap, easy, and yielded plenty for leftovers. Meatloaf to me is comfort food, which is a bit odd as I hated my mom’s meatloaf. It was loaded with more filler foods {oatmeal and french onion mix that came in a packet} than the meat itself. In order to eat it, you had to drench it in ketchup. My mom’s meatloaf is still a running joke in the family.
Occasionally, we still make it over there for a family dinner. When the meatloaf is on the menu, we are usually “busy.”
Just kidding – it has improved over the years.
You can prepare and prep my Simple Meatloaf recipe in as little as five minutes with minimal real food ingredients found throughout your kitchen and pantry. This will save you time and an extra trip to the store for things not stocked. While your Simple Meatloaf is cooking, you can prepare a side dish, catch up on household chores, or relax… What does relax mean? {Hi, mom of two toddler boys here!}
You shouldn’t need to drench your loaf in ketchup like I had to do as a child, but if you do have kids, having a Paleo bottle of ketchup {such as Primal Kitchen or Tessemea’s} is always a good idea. My kids love dipping, and when it a dip is involved I can expect empty plates and full bellies.

Instructions

Preheat oven to 350.

In a large bowl knead beef, egg, onion, mushrooms, thyme, salt, and pepper, until evenly combined.

Place beef mixture into a bread loaf pan.

Cook for 50-minutes to an hour.
