Growing Up on Tomato Soup

Growing up we ate a lot of Campbell’s tomato soup and burnt grilled cheese sandwiches. Not even with real cheese, those fake, nasty Kraft singles made out of sawdust and yellow food dye. It was pretty disgusting then, as it is now.

Processed fake cheese and sodium filled canned soups were the norm back then. No one thought twice about what they were eating because food companies made it quite simple to trust them. Nothing hooks a consumer by a fancy commercial and celebrity endorsements.

With an uptick in health issues across the globe, these very same companies we trusted then, we question now. I think it is excellent we start questioning these companies that once promised healthful foods while they were slowly killing us.

The best way to eat healthily is to start by making your own food.

I surprisingly still like tomato soup to this day, and I am still alive to say it. (Even after eating all those fake slices of cheese)! Tomato soup is pretty basic so transforming this childhood meal into a healthy Paleo alternative was easy. Take out the dairy, remove the chemicals, add some basil, simmer on the stove, and BAM. Homemade Roasted Tomato Basil Soup is Paleo, Vegan, AND easy to make. Ditch the canned tomato soup and make a homemade one instead.

Ingredients

Time needed: 45 minutes.

How to Make Paleo (+Vegan) Roasted Tomato Basil Soup

  1. Preheat oven to 400.

  2. Line an edged baking sheet with tin foil or parchment paper.

  3. Place tomatoes, onions, and garlic cloves onto the prepared baking sheet.

  4. Drizzle extra virgin olive oil over vegetables (about two tablespoons or less). Using your hand’s coat vegetables entirely.

    Salt and pepper to taste.

  5. Bake for 25 minutes. Remove from oven and cool.

  6. Once vegetables are cool, puree them in a food processor with fresh basil.

  7. Transfer puree to a saucepan and add in vegetable broth and tomato paste.

  8. Bring to a boil.

  9. Cover and simmer for 45 minutes. Stir occasionally.
