Hi, Mama! I’ve learned weird things happen after having kids (or maybe it’s old age); like my need to have a clean kitchen before bed or my endless craving for beets – Roasted Beets.

Homemade Roasted Beets that are Paleo, Vegan, AND easy to make. With minimal ingredients and minimal work, these make an excellent side to any dish.

For the past two years, we’ve planted beets (along with many other fruits and vegetables). Each year we plant way more than we can consume.

I’ve been pickling cucumbers by the gallon for over a month now, and I have tomatoes lined up in ascending order on my countertop. Obsessive Compulsive Disorder? A little.

Growing up I can only recall one time coming in contact with a beet. I was in second grade, and we were dying cloths with fruits and vegetables. I remember this very vividly because we had to try the produce.

This for me was a very traumatic experience as I’ve only eaten produce from a can. Thanks, Mom.

I’ll spare you the details, but I never ate a beet after that for decades – literally. Thankfully my sophisticated palate (or lack thereof) has changed for the better.

My love for beets runs rows wide through our garden and consumed quicker than you can say Roasted Beets.

To savour my love for my favorite rooted vegetable, I, for the first time, blanched and froze five pounds of beets.

Holy, mess. I dyed not only my own kitchen towels but also my hands. (Next time I’ll try using the juice from the beets as a natural hair dye). Resourceful, right?

How to Make Roasted Paleo (and Vegan) Beets

  1. Preheat oven to 350 and line an edged baking sheet with parchment paper.

  2. Wash, peel, and slice beets into 1/4 inch rounds. (You may also cut your rounds into crescent shapes by cutting them in half).

  3. Place beets into a large bowl with EVOO, salt, and pepper.

  4. Coat beets evenly and pour onto your prepared baking sheet with minimal overlap.

  5. Bake for 30-35 minutes.

  1. Preheat oven to 350 and line an edged baking sheet with parchment paper.

Recipe Notes

  • Replace olive oil with coconut oil or sautee in bacon grease, lard, or tallow.
  • If salt and pepper is lacking or too much for your taste, adjust as needed.
