  1. Preheat oven to 350 and grease an 8x8 inch glass baking dish with coconut oil.

  2. In a large bowl whisk together eggs, pumpkin puree, and maple syrup.

  3. Add in coconut flour, cinnamon, ginger, cloves, and baking soda. Stir until evenly combined.

  4. Fold in chocolate chips and pour into prepared baking dish.

  5. Bake for 45-50 minutes and cool completely in pan, cut, and enjoy!

Recipe Notes

  • Homemade pumpkin puree is preferred for this recipe otherwise I use Farmers Market Organic Pumpkin Puree
  • Switch out coconut flour for almond flour by doubling the measurements to one cup
  • You can switch out the maple syrup for honey using the same measurements. Note: This may change the texture and taste.
