This dish is nothing like the traditional grain-filled oatmeal you grew up with. Don’t let the looks or name of this sweet potato ‘oatmeal’ fool you; it is sweet, yet savory, and it breaks up the mundaneness of your boring eggs and bacon.

 

Mornings can become hectic with kids {and husband}, and breakfast can sometimes get lost in the mix of all the chaos. Make sure breakfast is taken care of by prepping the night before for a quick and healthy {egg-less} breakfast alternative.

 

I spend my Sunday’s meal prepping for the week ahead, which makes kicking off the week on a healthy start much more manageable. I’ll bake my sweet potatoes in the oven at 425 degrees for 40-50 minutes {depending on their size}. The bigger the sweet potato, the longer it will need to be cooked. Make sure to wash and fork your sweet potatoes a few times before throwing them into a pan and baking.

 

Kick off the day with a breakfast loaded with healthy fats, carbs, and calories the whole family will love.

Sweet Potato Breakfast Mash

Ingredients

  • 1 Baked Sweet Potato {already baked}
  • 1 TBSP Almond Butter
  • Handful Grain-Free Granola
  • Salt & Pepper

Instructions

  1. Remove skin from already baked sweet potato and mash into a bowl. Add in almond butter and heat in the microwave for a minute and thirty seconds. Stir.

  2. Salt and pepper and top with your favorite grain-free granola.

Note: I bake my sweet potatoes in advance at 425 for 40-50 minutes {depending on size}.
