Hi, Mama! I’ve been in the kitchen lately coming up with (new) and easy 30-minute meals for your family of picky eaters to enjoy like this Paleo Spaghetti.

Homemade Paleo Spaghetti that is Paleo, Keto, (Vegan option as well) AND easy to make. Great meal for large families on a budget or a quick dinner.

I heard your cry for help last week when dinner turned into an episode of Hell’s Kitchen.

Between the preparation of different ingredients left splattered on the countertops and the tops of your shoes and the two glasses of ‘screw it’ wine – dishes were ditched into the sink as an extra bonus to tomorrow mornings chaos.

To add to the last night’s mess, your kids didn’t even touch their forks and snacks were handed out as a meal replacement.

I’ve been in your shoes multiple times. Hell, I’ve even given up cooking dinner for a week and just threw snacks at my kids like they were elephants at the circus.

I’ve considered dropping them off their as well – they can play the terrible twosome toddler act. I’m sure there is room for yours as well.

All joking aside, each week I plan out six meals, then I head to the store with my TTT (terrible twosome toddlers) where they put on act one in the middle of the produce aisle.

After the performance of act two in the meat department (if, I get that far) we can usually make it out of the store with some of my sanity left.

I mean, seriously, there’s only so much penis and butt talk I can handle.

Anyways, I’ve had a hankering (omg; I’m getting old) for spaghetti lately…

I usually roast my zucchini in the oven, make the sauce on the stove and brown my meat in a pan. Which honestly just makes for more dishes and time spent in the kitchen.

I turned our favorite dinner from a three pan mess to only one. This will free up extra time spend with the family tonight.

Paleo Spaghetti

Ingredients

Time needed: 30 minutes.

How to Make One Pan Paleo Spaghetti in 30-Minutes in

  1. Heat a large skillet over medium-high heat. Add two tablespoons extra virgin olive oil.

  2. Place ground beef, minced garlic, diced onions, peppers, and mushrooms into skillet and cook until meat has browned while stirring occasionally.

  3. Drain grease and return to burner.

  4. Add in spiralized noodles and give it a good stir.

  5. Add all spices, tomato sauce, and drained diced tomatoes and tomato paste to the pan. Give a good stir.

  6. Cover and reduce heat to low. Cook for 20 minutes while stirring occasionally.

Tips & Tricks

  • No canned tomatoes? Use two freshly diced Roma tomatoes
  • For a more ‘Italian’ taste use basil in replace of the oregano. (I’ll be completely honest here, I dislike the taste of basil)
  • Vegan? Ditch the meat
  • Don’t like mushrooms? You won’t taste them BUT feel free to leave them out
  • No fresh garlic on hand? Use 1 teaspoon powdered garlic
  • Add-ins/Replacements: fresh spinach, olives, or anything else you can think of
