Paleo Pumpkin Bars with Chocolate Chips

Homemade Paleo Pumpkin Bars with chocolate chips are Paleo AND easy to make. Great for a fall treat or curbing any sweet tooth.

Ingredients

Time needed: 55 minutes.

How to Make Paleo Pumpkin Bars with Chocolate Chips

  1. Preheat oven to 350 and grease an 8×8 inch glass baking dish with coconut oil.

  2. In a large bowl whisk together eggs, pumpkin puree, and maple syrup.

  3. Add in coconut flour, cinnamon, ginger, cloves, and baking soda. Stir until evenly combined.

  4. Fold in chocolate chips and pour into prepared baking dish.

  5. Bake for 45-50 minutes and cool completely in pan, cut, and enjoy!

Tips & Tricks

  • Homemade pumpkin puree is preferred for this recipe otherwise I use Farmers Market Organic Pumpkin Puree
  • Switch out coconut flour for almond flour by doubling the measurements to one cup
  • You can switch out the maple syrup for honey using the same measurements. Note: This may change the texture and taste
  • Our favorite Paleo compliant chocolate chips are Enjoy Life
  • Ditch the chocolate chips and just enjoy the pumpkin bars

  • 1/2 Cup Coconut Flour
