Paleo, Easy to Make Breakfast, Minimal Ingredients, Allergy-Friendly

As a busy mom of two boys, I’m always looking for ways to eat nutrient-dense meals when time is short, and bellies are hungry. I’ve learned that making breakfast ahead of time (like these Paleo Omelet Waffles) not only saves me time each morning – it also relieves the stress of figuring out what to make.

Homemade Paleo Omelet Waffles are easy to make and full of nutrient-dense ingredients to start the morning off right. Make ahead of time and grab and go!

My kids love Birch Benders Paleo Pancake and Waffle Mix, and I love that there are Paleo options available, BUT the mom in me only allows pancakes and waffles on the weekend (I know I’m so mean).

I don’t believe kids should be loaded up with ‘healthy carbs’ and ‘natural sugars’ first thing in the morning – especially on busy days and during the school year.

A carb-filled breakfast that early in the morning sets the rest of the day up for failure.

To avoid the insulin spike and crash, I decided to take a healthier approach to my boys’ favorite meal; Paleo Omelet Waffles. Start your day off right with the proper nutrition and macronutrients for a full day of work or play.

Notice: I would be lying if I said they were super excited about these – because they were not. After a couple of days, they finally came around, and now my boys love their omelet waffles (and so does my husband).

P.S We do make them ‘real’ waffles and pancakes on the weekend. 🙂

Paleo Omelet Waffles

This breakfast is excellent for large families, Sunday brunch, or for those who like to meal prep. One batch will make 12 omelet waffles total. Just like my egg bake recipes, this recipe is also very versatile – if your family disagrees with the ingredients listed below try swapping them out for their favorites!

How to Make Paleo Omelet Waffles

Homemade Paleo Omelet Waffles are easy to make and full of nutrient-dense ingredients to start the morning off right. Make ahead of time and grab and go!

Ingredients

  • 10 large eggs
  • 1/3 Cup non-dairy milk almond or coconut
  • 1/2 diced onion
  • 3 cloves minced garlic
  • 6 oz frozen or fresh chopped spinach
  • salt to taste
  • pepper to taste

optional: red chili flakes – just a pinch per waffle

Equipment

Time needed: 10 minutes.

How to Make Paleo Omelet Waffles

  1. Heat waffle iron until your device says ‘ready.’

  2. Spray both sides of your waffle iron with coconut oil.

  3. In a large bowl whisk eggs and non-dairy milk together.

  4. Using a 1/3 measuring cup scoop eggs into each side of your waffle iron (please see notes below for model options).

  5. Top with the desired amount of the above listed ingredients and close.

  6. Depending on your waffle maker you may need to flip your omelet half way through otherwise leave for 4-6 minutes.

Tips & Tricks

  • I have a small (very old) side by side waffle maker that is similar to the Hamilton Beaches design. So this recipe is based on that waffle makers specifications.
  • If you have a rounded or single waffle maker you will need to add more egg mixture in – you’ll have to play around to find the right amount. I would start with 1/2 and see how it fills and bakes.
