Hi, Mama! Mornings can be rough, especially when you forgot to prep and bake your Egg Bake last night. Then add kids to the mix and mornings become a dreaded nightmare. You strap up for the same battle every morning; forcing them out of bed, shoveling food down their throats, gagging them with their toothbrush, and finally, falling on the floor in defeat as you try and find the same shoe that was missing from the day before.

After losing the morning battle, you rush those little soldiers to school and drop them off before they take whats left of your sanity. {What, 5%?} If your lucky, you’ll make it home in one piece with enough energy to reheat your coffee and no new gray hairs.

Believe me, I know you are busy with the kids, but take a few seconds and refuel with more than your reheated coffee. {I honestly should take my own advice sometimes}.

Don’t worry mama; this recipe is easy. Just prep and bake the night before and after tomorrow mornings battle, cut yourself a piece and reheat it with your coffee.

Make ahead of time for a quick on-the-go breakfast.

Ingredients

13x9 Glass Dish

  • 8 Eggs
  • 1 TSP Baking Soda - optional
  • 1/4 Cup Onion - diced
  • 1/4 Cup Spinach - chopped
  • 1/4 Cup Grape Tomatoes - halved
  • 4-6 Frozen {Already Cooked} Sausage Links - cut into 1/2 inch pieces
  • Salt & Pepper - to taste

Instructions

  1. Preheat oven to 350.

  2. Grease a 13x9 baking dish with oil {coconut or avocado}.

  3. In a medium bowl whisk eggs and baking soda.

  4. Add vegetables and sausage links.

  5. Pour into greased baking dish. Salt and pepper to taste. Cook for 30-35 minutes or until eggs are fully cooked.

Recipe Notes

  • Baking soda helps the eggs raise but can omit if desired.

  • Switch out any undesired vegetables for ones your family will love.
