Hi, Mama! I know you’ve been missing bread lately and its that ‘time of the month’ where the chocolate cravings are kicking your butt. I’m right with you and needed a fix fast.

 

FAST.

 

I know what you are thinking, mama, but running to the corner store for a Twix is not worth it. {or whatever your poison is during desperate times}

 

I’ll be honest with you, the prep and bake time on this bread is well worth your health and wellbeing. If you don’t plan on sharing with the family, I would hide this delicious sweet treat high up where little hands can not reach. I can guarantee the pan will be scrapped or licked clean, depending on how caveman like your tribe is.

Paleo Chocolate Chip Banana Bread

Ingredients

  • 3-4 Ripe Bananas
  • 4 Eggs
  • 1/2 Cup Coconut Flour
  • 1/4 Cup Enjoy Life Mini Chocolate Chips
  • 4 TBSP Coconut Oil
  • 1 TSP Baking Soda
  • 1 TSP Vanilla
  • 1/4 TSP Salt

Instructions

  1. Preheat oven to 350.

  2. Combine ingredients and fold in chocolate chips. Pour into a bread pan.

  3. Bake for 45-50 minutes. Cool in pan, cut, and enjoy.

There is nothing more satisfying than freshly baked bread… well, maybe a few other things. 😉
