Hi, Mama! Mornings can become hectic, and the standard eggs and sausage meal is overrated and boring. I have a healthy, energy-filled, and delicious, breakfast treat {or snack} to kick off the busy day.


Replace tomorrow mornings soggy eggs with a NO BAKE {PALEO} chocolate chia pudding. Skip the hassle and prepare this the night before for a quick out the door breakfast.


The Chia Seed

I’ll be honest, I rarely eat seeds, mainly because they are hard to find in our area and I struggle with incorporating them into our diet. All seeds are underestimated {especially the chia seed}, but the reality is they have so many nutritional benefits, we should be eating more of them.


The chia seed has become one of the most popular superfoods in today’s health community. Don’t let its size fool you; this seed is loaded with beneficial nutrients. One tablespoon is packed with your daily dose of necessary proteins, antioxidants, healthy fats, vitamins, minerals, and energy. For such a small seed it sure packs a powerful punch of nutrients!!


Skip the boring breakfast and replace it with a mighty bowl of NO BAKE {PALEO} chocolate chia pudding. Top with an array of fruits, granola, or eat plain!

Paleo Chocolate Chia Pudding

  • 1 1/2 Cup Coconut Milk
  • 1/3 Cup Chia Seeds
  • 1/4 Cup Raw Cacao Powder
  • 6 Pitted Dates
  • 1 TSP Vanilla


  1. Place all ingredients into a food processor and blend together.
  2. Pour mixture into a bowl and cover.
  3. Chill overnight and eat tomorrow morning!

Recipe Notes

Optional: Top with fresh cut up fruit or granola.
