These egg muffins make a great start to any morning. They are also a brilliant way to sneak vegetables into your kid’s daily routines without them noticing.

These muffins taste great with a side of sausage, bacon, or fresh cut up fruit. (Don’t forget your coffee!)

There are probably a thousand different ways to make these. I’m just sharing our favorite recipe. Please, feel free to change ingredients or add one. I can’t cater to everyone’s likes and dislikes. I can only provide what works for my family.

Ingredients

  • 8 Large Eggs
  • 1/2 Green Pepper Chopped
  • 1/2 Onion Chopped
  • 4 Mushrooms Chopped

Equipment

Time needed: 35 minutes.

How to Make Paleo Egg Muffins

  1. Preheat oven to 350. Use a muffin pan and place muffin cups into each compartment.

  2. In a small bowl whisk together your eggs. Add vegetables.

  3. Pour egg mixture into muffin cups about 2/3 of the way. Salt and pepper to taste.

  4. Bake for 30 minutes. Let cool in pan.

Tips & Tricks

  • Feel free to change ingredients or add one based on your favorites likes and dislikes
  • Eat with a side of sausage, bacon, or fruit
  • Microwave for 30 seconds to reheat
  • If you do not have muffin cups you can grease the muffin tin with coconut oil. Our favorite coconut cooking spray is:Pompeian Cooking Spray, Coconut Oil, 5 Ounce
