These Paleo bacon prosciutto wrapped chicken breasts are low-carb, full of protein and flavor, and will become a party favorite and family dinner.

There are thousands of ways to prepare, cook, and eat chicken, but wrapping it in bacon is mine and the family’s preferred choice (and soon will be yours too)!

The chicken stays moist while the prosciutto adds flavor, and the bacon gives a crisp to every bite that is infused with an added savory Italian seasoning. YUM!

How to Make Paleo Bacon Prosciutto Wrapped Chicken Breasts

Delicious and moist bacon prosciutto-wrapped chicken breasts are perfect for any occasion, including parties, weeknight meals (paired with your favorite Mom Eats Paleo side dish), or eat as a post-workout snack!

1. Preheat the oven to 375 degrees and line an edged baking dish or sheet with parchment paper, set aside.

Tip: If you do not want your wrapped chicken cooked in its juices, you can line an edged baking sheet with either parchment paper or tin foil and place an oven-safe wire rack on top. Cook the bacon and prosciutto-wrapped chicken as directed.

2. In a small bowl, combine Italian seasoning, black pepper, and sea salt and generously coat chicken breasts.

Tip: You can always use chicken tenders in place of chicken breasts. The smaller tenders are perfect for appetizers and finger food.

3. First, wrap each chicken breast in 1 slice of prosciutto, followed by wrapping 2 slices of bacon around the prosciutto-wrapped chicken and place into the prepared dish.

4. Bake in the preheated oven for 25 to 30 minutes or until the middle is oblique and has reached an internal temperature of 165 degrees.

5. Turn the broiler on high and broil the bacon for 2 to 3 minutes or until crisp. Carefully turn the wrapped chicken breast and cook for an additional 2 to 3 minutes or until crisp.

How to Source the Best Chicken

For most of us hunting down or raising our own chicken is out of the question, so the next best option is purchasing locally pastured raised chickens. You can typically find pastured raised chickens at farmer’s markets, co-ops, local farms, and butchers.

How to Store Paleo Bacon Prosciutto Wrapped Chicken Breasts

Store your wrapped chicken breasts in an airtight container for 3 to 5 days. Leftovers are great for slicing up and topping over your favorite salad, eating as a post-workout snack, or meal prepping for the weeks’ lunches ahead of time.

To reheat, preheat in the oven to 350 degrees and bake for 5 to 10 minutes in the preheated oven or until warmed. This will keep the bacon crisp and the chicken from becoming dry.

Bacon – Sourcing uncured and sugar-free bacon has become easier with companies like Applegate and Pederson’s Natural Farm. If you don’t have these options in-store source fresh bacon from your local farm or butcher.

Prosciutto – Applegate provides deli-sliced prosciutto with no additives (well, besides sea salt).

Chicken – Pasture-raised chickens are always best!

Italian Seasoning – Make a budget-friendly homemade blend from your pantry using; dried basil, dried oregano, dried thyme, ground marjoram, garlic powder, and dried sage.

Sea Salt – Everyone has their opinion on the best sea salt, so use whatever’s in your kitchen.
