Hi, Mama! If you are anything like our family, I’m sure you went apple picking this past weekend, or you are planning on it. If I have one piece of advice to save what’s left of your sanity: DON’T DO IT and head to your local farmer’s market instead for already picked apples and make this delicious and moist {I hate that word} Paleo Apple Walnut Cake!

We started picking apples every fall after our first son was born. Making memories is what having a family is all about, even when you want to pull every strand of hair out in the process. Instead you smile and hope you got at least one good picture of your kids, and after all the “fun” you had, you end the night at the liquor store to pick up a bottle of wine. Not saying those exact events occurred but I did have a much-needed adult beverage.

This past weekend marked our fourth-year apple picking, and each year we say the same thing; what are we going to do with all these apples?

Surprisingly, I barely had enough to make anything, but this Paleo Apple Walnut Cake since the boys ate most of them. Which, I can’t be too mad at considering zero apples went to waste this year, and we got our money’s worth. YES!

Instructions

  1. Preheat oven to 350.

  2. Grease an 8x8 pan with coconut oil.

  3. In a medium-sized bowl mix together almond flour, tapioca flour, cinnamon, salt, and baking soda.

  4. Melt coconut oil in a medium-sized microwave-safe bowl for 30-45 seconds. Add in coconut sugar, egg, and vanilla and whisk.

  5. Pour dry mixture into wet mixture and combine until smooth. Fold in diced apples and walnut pieces.

  6. Pour into your prepared 8x8 pan and bake for 30-35 minutes.

  7. Cool completely before cutting.
