Mint Mocha Pudding

This pudding offers an escape from the kid’s desserts and provides a nutritional yet delicious treat for mommy and daddy. Hey, it’s okay to treat yourself every now and again!!

Almond Milk

I personally love the taste and texture of almond milk. Coconut milk is an excellent substitute if allergies or readily available ingredients are an issue.

I highly suggest full fat canned coconut milk for it’s nutriental profile when switching.

Cacao Powder

Raw cacao powder and cocoa powder are very similar in looks, but they are total opposites when it comes to their nutritional profile.

Cacao powder is made by cold pressing unroasted cacao beans. This process allows the removal of fat but keeps the living enzymes.

While cocoa powder looks the same as cacao, it unfortunately, is roasted at high temperature. The high temperature change the molecular structure which lowers the nutriential value.

  • reduces blood pressure and risk of cardiovascular disease
  • boost mood
  • contains essential minerals – magnesium, iron, potassium, zinc, and copper just to name a few

Chia Seeds

Don’t let its size fool you; this seed is loaded with beneficial nutrients. One tablespoon is packed with your daily dose of necessary proteins, antioxidants, healthy fats, vitamins, minerals, and energy.

For such a small seed it sure packs a powerful punch of nutrients!!

Time needed: 10 minutes.

How to Make Paleo Mint Mocha Pudding

  1. Place all ingredients into a food processor and mix until everything is evenly combined. (30-45 seconds).

  2. Remove from food processor and place into your desired bowl.

  3. Chill in the fridge for an hour before serving.

Tips & Tricks

  • If you do not have ground chia seeds, you can use a coffee grinder and ground them up yourself
  • A blender or hand mixer works just as well as a food processor.
  • Best if served chilled
  • Omit mint for a Chocolate Mocha Pudding
  • Top with homemade whipping cream and fruit

Ingredients

  • 1 + 1/2 Cup almond milk
  • 1/4 Cup ground chia seeds
  • 2 TBSP cacao powder
  • 2 TBSP maple syrup or coconut sugar
  • 2 TSP expresso powder or ground coffee
  • 1 TSP vanilla
  • 1/2 TSP mint extract
