Hi, Mama! I see you are back for more YUMMY chocolate treats, like these; No Bake Mini Paleo Fudge Cakes. After last weeks triple chocolate cookie recipe you’d think my chocolate craving would have subsided. Never…  Who are we kidding? My chocolate addiction is just as bad as my alcohol consumption on the weekends.

 

Hey! Don’t judge.

 

In all honesty, I would have never made these No Bake Mini Paleo Fudge Cakes if it wasn’t for my sister. As the older more ‘responsible’ of one, I can blame her for a lot of things since she ruined my teenage social life. 

 

Just as my mom made me watch my younger sister growing up, she now has tasked me with an almost impossible request. A Paleo AND Vegan dessert. I normally don’t listen to my mom or take requests, but I felt up to the challenge as it was my sisters birthday after all.

 

Funny but short story; I’m Paleo and my sister is Vegan. You really can not get more opposite than that. We disagree on a lot, like our lifestyles {I for one can not give up bacon no matter how many Vegan propagated documentaries I watch} but, we can agree on one thing…

These No Bake Mini Paleo {and Vegan} Fudge Cakes are like D-E-L-I-O-U-S-L-Y addicting.

 

Enjoy these fudgy morsels as they will disappear faster than last nights bottle of wine.

Mini Paleo Fudge Cakes

No bake Paleo dessert

Ingredients

Mini Cupcake Pan

Mini Cupcake Liners

  • 1 Cup Paleo Chocolate Chips
  • 8 TBSP Full Fat Coconut Milk
  • 1 TBSP Coconut Oil
  • Sea Salt

Instructions

  1. Combine chocolate chips, coconut milk, and coconut oil in a small saucepan over low heat. Stir until all ingredients have melted together.

  2. Pour one tablespoon into each cupcake liner. Sprinkle the desired amount of sea salt on the tops of each mini fudge cake.

  3. Place in freezer for one hour.

Recipe Notes

Store extra Mini Fudge Cakes in the freezer. Remove from freezer three to five minutes before indulging.
