Mini Paleo Fudge Cakes

Hi, Mama! I see your back for more YUMMY Paleo desserts!! You’re in for another chocolatey treat!

 

I was tasked last week to come up with a dessert that was not only Paleo but also VEGAN. Yes, Vegan. It’s a bit comical as I am Paleo and my sister is Vegan. We both have our reasons for choosing the lifestyle we live {I for one can not give up bacon no matter how many Vegan propagated documentaries I watch} but we can both agree we are healthier and happier than years ago.

 

Everyone deserves to be healthy and happy.

 

As much as we disagree on things, we both agree that these mini Paleo fudge cakes are flipping addicting. These fudgy morsels will disappear pretty fast, but for those that straggle behind its best to keep them stored in the fridge, unless you live in Antarctica, then melting shouldn’t be an issue.

 

Enjoy a dessert that not only melts in your mouth but also in your hands. 😉 {It’s okay to get a little dirty once in a while and eat real food}.

 

Mini Paleo Fudge Cakes

Ingredients

  • 1 Cup Paleo Chocolate Chips
  • 8 TBSP Full Fat Coconut Milk
  • 1 TBSP Coconut Oil
  • Sea Salt

Instructions

  1. Combine ingredients into a small saucepan over low heat. Once chocolate chips start melting, continue stirring until everything is melted together.

  2. Line mini cupcake sheet with mini cupcake holders.

  3. Pour one tablespoon into each cupcake holder. Sprinkle the desired amount of sea salt on the tops of fudge cakes.

  4. Place in freezer for 1 hour then keep in the fridge for storing.
