Hi, Mama! Last Easter I made chocolate eggs and figured I’d better turn my recipe into a treat that can be enjoyed all year with these Mini Chocolate Cups filled with nut butter.

Otherwise known as Chocolate PeaNOT Butter Cups. Get it? I love a good laugh every now and again.

Homemade Mini Chocolate Cups filled with your favorite nut butter are Paleo AND easy to make. Paleo dessert that tastes better than Reese’s Cups.

These Mini Chocolate Cups were originally made with SunButter, but feel free to use your family’s favorite seed or nut butter.

I know what you are thinking – Why SunButter?

Long story short; after a scare with a horrible reaction to peanut butter, an allergy test confirmed my oldest (then one at the time) was not only allergic to peanuts but all tree nuts as well. Which is odd from a health perspective, a peanut is a legume, yet he can eat all those other offensive things without any reaction.

After clearing out our pantry of all things peanuts and tree nuts (which was a lot by the way), I found myself questioning and blaming myself for his allergies. I mean, I did eat a tub of peanut butter each week while I was pregnant with him.

The thought of consuming that much peanut butter now is repulsive, but almond butter on the other hand- YES, PLEASE!

When creating recipes, I always consider his allergies. It would be unfair to him if I made a delicious treat like these Mini Chocolate Cups with almond butter and ate it in front of him.

More Paleo Dessert You’ll LOVE

On that note, if allergies are not issues in your household, I highly suggest using your favorite nut butter in replace of the SunButter in this recipe. (measurements stay the same).

Whether you craft this recipe with SunButter, almond, or cashew butter, your in for a mouth full of goodness! My husband said that once.

Mini Chocolate Cups

Ingredients

Time needed: 40 minutes.

How to Make Paleo Mini Chocolate Cups filled with Nut Butter

  1. Melt Paleo Chocolate Chips in a small saucepan over low heat.

  2. While your chocolate is melting, combine SunButter, coconut flour, and maple syrup into a mixing bowl. Mix until everything is evenly combined.

  3. Line your mini cupcake tin with mini cupcake liners.

  4. Pour 1/2 teaspoon of melted chocolate on the bottom of the mini cupcake liners.

  5. Take one teaspoon of your SunButter mixture and roll into balls.

  6. Place balls into liners and slightly press down.

  7. Pour 1/2 teaspoon melted chocolate over the top- or enough to cover the SunButter middle.

  8. Freeze for 30 minutes and store in the fridge.

Ingredients

  • 1 Cup Paleo Chocolate Chips
  • 1/2 Cup SunButter Or your choice of nut or seed butter
  • 1/3 Cup Coconut Flour
  • 4 TBSP Maple Syrup

Instructions

  1. Melt Paleo Chocolate Chips in a small saucepan over low heat.

  2. While your chocolate is melting, combine SunButter, coconut flour, and maple syrup into a mixing bowl. Mix until everything is evenly combined.

  3. Pour 1/2 teaspoon of melted chocolate on the bottom of the mini cupcake liners.

Use measurement below for half the batch and follow the same instructions above:

  • 1/2 Cup Paleo Chocolate Chips
  • 1/4 Cup SunButter
  • 2.5 TBSP Coconut Flour
  • 2 TBSP Maple Syrup
