- 2 Large Parsnips
- 1/4 Cup Coconut Milk
- Salt & Pepper to taste
Time needed: 25 minutes.
How to Make Paleo Mashed Parsnips
- Fill a medium-sized saucepan with water and bring to a boil.
- Wash, peel, and cut parsnips into one-inch chunks.
- Add parsnips to boiling water and cook for twenty minutes.
- Drain and cool a little bit before placing into the food processor.
- Add coconut milk, salt, and pepper to taste. Blend until creamy.
