Homemade Kale Chips

Paleo, Vegan, Gluten-Free, Minimal Ingredients, & Allergy Friendly

 

Hi, Mama! Last weekend I took the boys {husband excluded} to the farmers market and gave each of them a few dollars to pick out anything they wanted. Which I don’t condone doing at the candy store… Results may vary but I’m sure most candy store trips end with a lot of crying and cavities. Luckily for me, our little trip ended with bunches of kale, a pound of asparagus, and one large butternut squash. I can proudly say my boys choose well.

Truth be told, I literally just went grocery shopping and already had that stuff in the fridge. Heres the thing, when I allow my boys to choose and take part in selecting healthy foods, more times than not, they will try new things. Like these kale chips.

 

Having two toddler boys, nothing seems to surprise me anymore, but let me tell you, I had the shock of my life when they both asked to try kale chips. Not only did they try them but the ate every last one. It looks like another trip to the farmers market is in store this weekend!

Ingredients

  • 1 Bunch Kale
  • 1 TBSP Extra Virgin Olive Oil
  • Salt to taste

Instructions

  1. Preheat oven to 350 Line a flat baking sheet with parchment paper.

  2. Remove kale leaves from their hearty stalks and place into a bowl.

  3. Add one tablespoon EVOO and toss kale until everything is evenly coated.

  4. Place kale on the prepared baking sheet with minimal overlap.

  5. Salt to taste and bake for 10 minutes.

Recipe Notes

Add 1-2 minutes for crispier kale chips!
