My husband LOVES cashews. I use to share the same passion until I realized cashews were actually legumes. (Who knew)?!

If you are following a strict Paleo diet and lifestyle – we all know legumes should be consumed moderation OR not at all. Depending on where you stand on the cashew debate you may find yourself here for this delicious (VERY ADDICTING) Honey Glazed Cashews recipe!

The other day I took my family to Costco… I don’t usually do this, as we end up buying stuff we don’t need, but while we were there, my husband came across a container of glazed honey cashews.

They obliviously were not Paleo, BUT I allowed him to get them anyway (as long as he kept them far away from the house as possible).

Long story short those cashews stayed in our house, and I ended up eating more than I’d like to admit. (Hey! I’m only human).

I really enjoyed these cashews – I decided to make a Paleo rendition of them so I would feel less guilty eating more than a handful.

No shame in my game.

Honey Glazed Cashews

Homemade Honey Glazed Cashews are easy to make AND delicious. Enjoy this Paleo snack on-the-go or for a quick afternoon, pick me up.

Time needed: 15 minutes.

How to Make Honey Glazed Cashews

  1. Preheat oven to 350.

  2. Line an edged baking sheet with parchment paper.

  3. Put cashews into a large bowl and stir in honey until each cashew is coated.

  4. Place cashews onto prepared baking sheet. Sprinkle with sea salt as desired.

  5. Bake for five minutes.

  6. Using a spoon or spatula rotate cashews then bake for an additional five minutes.

  7. Remove from oven and sprinkle 2 tablespoons (or more to your liking) coconut sugar.

  8. Move cashews around until they are all evenly coated and cool before enjoying.

Tips & Tricks

  • Make sure to sprinkle coconut sugar onto cashews as soon as possible so it sticks!
  • Store in an airtight container for up to two weeks.
