Hi, Mama! You’ll never believe this {or maybe you will}, I just bought rock hard organic avocados yesterday and today they are softer than a babies bottom! What gives?

 

Must be the lousy picking on my two-year-olds part. Hey, don’t judge! Someone needs to take the blame for my almost rotting avocados.

 

If you don’t know yet, I am a frugal housewife. Not only do I love saving a few pennies {literally}, but I also hate wasting food. Whether I have to cut off the rotting part or throw it in our compost bin, it is not going in the landfill with our poopy diapers.

 

With the three ‘softer than a babies bottom’ avocados, I made a batch of my husband’s famous guacamole. I totally have to give him credit for this recipe, mainly because it’s the right thing to do.

 

Not only were my avocadoes going bad, but so was half the other produce I bought yesterday. I did a lot more cutting and dicing than I anticipated. {inserts eye roll here}

Note to self: avoid shopping on Mondays.

 

No snack or appetizer is complete until the guacamole makes its daytime {or nighttime} appearance! Nothing beats freshly prepared guacamole. Wait, I take that back… chocolate beats everything.

 

Indulge yourself by the spoonful or share by double dipping freshly cut vegetables or Sietes {Paleo compliant} chips with the kids.

 

Intoxicate your taste buds while loading up on healthy fats and nutrient-dense vegetables without the guilt those store-bought containers leave you with.

Homemade Guacamole

Ingredients

  • 3 Avocados
  • 1 Firm Tomato
  • 1/2 Bell Pepper
  • 1 Small Onion
  • 4 Cloves Garlic
  • 1/4 Cup Cilantro
  • 1 Freshly Squeezed Lime
  • 1/2 Optional: Jalapeno
  • Salt and Pepper to taste

Instructions

  1. In a medium-sized bowl mash avocado until smooth.
  2. Add freshly squeezed lime juice and salt to taste.

  3. Finely dice all vegetables and fold into the avocado.

Recipe Notes

Serve with a side of Siete Chips or a plate of colorful vegetables.
