Growing up we ate a lot of pork chops. They were always overcooked and over breaded with shake and bake. {ew}

I didn’t always have a love for cooking or a clean track record when it came to functioning in the kitchen. Surprise!

So, when I left the house at eighteen, I realized I not only had to clean but I also had to cook to survive.

Anyone that says they can’t wait to move out of the house will come to realize it is best to stay, even if you are fed overcooked pork chops and killer (not the good kind) meatloaf.

So, knowing nothing about food, I was to starve or make the only thing I knew, overcooked and overly breaded pork chops.

I actually made my mom’s famous overcooked pork chops for my husband when we first started dating.

He is still alive.

Herb Pork Chops & Butternut Squash

  1. Preheat oven to 425

  2. Line an edged baking sheet with tin foil and put an oven-safe rack on top. Place pork chops on top and salt and pepper to taste.

  3. In a small bowl whisk together mustard and apple juice and put off to the side.

  4. Wash and peel the butternut squash and cut into 1-inch pieces. Place squash and sliced onions into a large bowl.

  5. Brush mixture on the tops of the pork chops and pour the rest into your large bowl with the squash. Sprinkle one teaspoon herbes de Provence, salt, and pepper into the bowl and give it a good stir until everything is evenly coated.

  6. Sprinkle the rest of the herbes de Provence evenly between all pork chops.

  7. Pour the contents from your bowl around the pork chops.

  8. Bake for 20-25 minutes or until your pork chops are around 150.
