Fried Paleo Zucchini Slices are easy to make AND Paleo. This appetizer is made with minimal healthy ingredients and is excellent for any event or party.

It amazes me on the amount of zucchini you can get from one plant – let alone five. I’m trying to keep up with all the zucchinis – it’s a zucchini overload!!

Between adding them to my favorite stir fry recipe and bread – I still have dozens taking up real estate on my counter and in my fridge. What to do with all these zucchinis? Fry them, Paleo-style!

Fried Paleo Zucchini Slices

Last week we attended the state fair here in Wisconsin – known for everything you can think of fried on a stick.

Fried smores, fried ice cream, fried pickles, fried tacos…

I think you get the point?

If my husband comes with, I will usually try a few things he gets, but this year, I took the kids by myself and purchased zero fried foods on a stick. While the temptation was there, the after-effects and the prices were not worth it.

NOW that the fair is over, I’m craving fried food. While these Fried Paleo Zucchini Slices are far from fair food – they offer an excellent alternative for those fried food cravings.

This appetizer is great for any hosted event (parties, game night, or dinner party), or as a side dish to one of your favorite Mom Eats Paleo recipes.

Fried Paleo Zucchini Slices

Fried Paleo Zucchini Slices are easy to make AND Paleo. This appetizer is made with minimal healthy ingredients and is excellent for any event or party.

Time needed: 10 minutes.

How to Make Fried Paleo Zucchini Slices

  1. Heat skillet over medium-high heat and add enough avocado oil to fill the bottom of your skillet.

     

  2. Whisk egg in one bowl and place birch benders mix into another bowl.

     

  3. Wash and slice your zucchini into slices.

     

  4. Place zucchini slices into egg and then coat evenly into the mix.

     

  5. Carefully place zucchini slices into skillet without overlap. Fry for 3 minutes and then flip for an additional 3 minutes.

     

  6. Remove from skillet and place onto a paper towel. Allow excess oil to drip off and cool before eating.
