Crockpot Paleo Beef Stew
I love crockpot meals, it requires minimal work to throw together and produces flavorful and delicious results. This Paleo beef stew is perfect to make any day of the week.
I usually save my crockpot meals for days I won’t have time to cook, or I’m just too lazy. Yes, I plan lazy days. Most stay at home moms do. Those are the days where I forget about cleaning and my two-page to-do list. Instead, I sip coffee while watching rescue bots and daydream of a mom-cation. Massages, drinks, and alone time. Every mom’s dream. Right, ladies?
This Paleo beef stew is gluten-free, grain-free, dairy-free, soy-free, sugar-free, egg-free, peanut/tree nut-free, and chemical-free.
This is a great dish to make before the weather starts getting warm!!

Crockpot Paleo Beef Stew

Ingredients

  • 1 1/2 lbs Beef Stew Cut
  • 3 Onions Quartered
  • 5 Carrots Chopped
  • 3 Celery Stalks Chopped
  • 2 Sweet Potatoes Chopped
  • 1 Cup Vegetable Broth
  • 2 TSP Arrowroot Thickening Agent

Seasoning:

  • 1 TSP Garlic Powder
  • 1 TSP Onion Powder
  • 1 TSP Paprika
  • 1 TSP Chili Powder
  • 1 TSP Oregano

Instructions

  1. Mix seasoning ingredients together in a small bowl and place beef into the crockpot.

  2. Salt and pepper to taste to your liking and pour half of the seasoning over the beef.

  3. Add in onions, celery, carrots, and sweet potatoes and pour remaining seasoning over vegetables.

  4. Cook on low for 6 hours. Take meat and vegetables out of crockpot leaving the juices in.
  5. Add in one cup vegetable broth and two teaspoons arrowroot.

  6. Whisk together. Add meat and vegetables back in.
  7. Stir and enjoy.
