Hi, Mama! Getting your kids to eat healthily can be a challenge at times, so why not make their favorite premade frozen lunch into healthy homemade Crispy Paleo Chicken Nuggets, instead?!

For years I was purchasing frozen chicken nuggets from the store for a quick lunch or dinner for my two toddler boys. Each one of those frozen packages of nuggets depicted, “healthy ingredients,” “organic,” and “gluten-free,” but the reality behind the pretty logo and the promise of vegetarian fed chickens {whatever that means} is anything but healthy, organic, or natural.

A few months ago I ditched the frozen premade crap for real, organic, fresh, homemade Crispy Paleo Chicken Nuggets.

I even eat these nuggets with the kids {no more making two meals for us}! The fact that the words, “Mom, can you make these every day?” {UM YES!} rings through the air every day I make these proves they didn’t even notice the difference.

 

Finding the Best Chicken

For most of us hunting down or raising our own chicken is out of the question, so the next best option is purchasing locally pastured raised chickens. You can typically find these delicious domesticated fowls at farmers markets, co-ops, and local farms and butchers. If these options are unavailable, USDA-certified organic chicken is prevalent and can be found at many stores such as Whole Foods, Costco, and now online at Thrive Market.

Unfortunately, regulations on labels are very loose and should be taken with a grain of salt, literally. Terminologies such as free-range, hormone and antibiotic free, natural, or vegetarian raised may not be the best options. No matter how pretty their label is.

If your budget is tight and affording pastured chicken or any other grass-fed meat is out of the question your next best option on the spectrum, is organic. When all else fails, it’s okay to eat meat from CAFO {once in a while}.

The vast majority of animals are offered in conventional stores are produced by Concentrated Animal Feeding Operations {CAFO}. These animals typically contain hormones for rapid growth, pesticide ingested from inferior feed sources {such as grain}, and antibiotics to prevent infection due to their living circumstances. Meats produced from CAFO aren’t the best source of protein but take note, you will not die eating it occasionally.

Usually, when I make these Crispy Paleo Chicken Nuggets, I will double the batch for extras and leftovers. Leftovers can be used as an extra meal or snack or topped over a salad {my favorite way to eat leftovers}.

Although, these chicken nuggets take a bit more prep work than preheating the oven and throwing those premade nuggets on a pan or into the microwave. You can easily double or triple the recipe and store in the fridge {cooked} up to 3-5 days or in the freezer for a more extended period of time. {Time is yet to be determined since these don’t last longer than a few days in our household}.

Just reheat the oven to 350 and place frozen nuggets on an oven safe baking sheet for 10-15 minutes or 5-10 minutes out of the fridge. This will keep them crispy and not soggy!

Instructions

  1. Preheat oven to 400. Place parchment paper or tin foil {greased} on a flat baking sheet.

  2. In a medium bowl combine tapioca flour, shredded coconut, paprika, salt, and pepper. In a separate bowl whisk the egg.
  3. Place chicken tenders (one at a time) into whisked egg {let any access egg drip off} and then transfer to flour mixture. Coat both sides of chicken graciously.
  4. Place tenders into your prepared baking sheet.
  5. Bake for 20 minutes.

Dip chicken nuggets into your favorite dipping sauce:

 

No egg on hand? Coat chicken in BBQ Sauce before tossing in dry mixture.

Want extra crispy chicken nuggets? Try these frying instructions:

  • Heat coconut oil in a 6 or 8-inch cast iron skillet over medium-high heat (for about 10 minutes)
  • Follow the above directions for preparation
  • Place coated chicken nuggets in skillet for 3-5 minutes and turn halfway through
  • Remove from oil and place on a towel-lined plate to dry
