Paleo, One Pan, Grain-Free, Allergy-Friendly, – 30-Minute Paleo Dinner

Hi, Mama! Last weeks cry for help got my hamster wheel spinning as I executed another one pan 30-minute meal; Chicken Pizza.

Homemade Chicken Pizza that is Paleo, Keto, AND easy to make. Great alternative to the traditional pizza with a healthful twist.

If you are missing pizza, this is definitely a dish to throw together when the craving overwhelms you, but cheating on your diet this week is out of the question.

I’ll be completely honest with you; I leave one meal a week open on my meal plan for an ‘oops meal.’ It took me a long time to realize one cookie or one nasty slice of Dominoes pizza would not kill me or set me back.

Well besides the grain bloat and sugar headache the next day, like some kind of hangover.

If you are just starting out eating Paleo or Primal, I do not suggest doing this until you are fully aware of your trigger foods and the cravings for these offenders have subsided.

Also, since I’m being honest here, no Paleo meal taste like the ‘real’ thing. It can come close (and a lot of time tastes better) but don’t expect a Chicago style pizza to come out of the oven.

Just like the pizza joint down the street, there are several toppings to choose from, and I highly you construct your Chicken Pizza to your family’s likings.

Ingredients

  • 14 oz Chicken Tenders
  • 1 Cup Tomato Sauce – divided
  • 1 Small Onion – diced
  • 3 oz Mushrooms – diced
  • 9 Sliced Pepperoni
  • 1/2 TSP Oregano
  • Salt and Pepper to taste

Time needed: 35 minutes.

How to Make a Paleo Chicken Pizza

  1. Preheat oven to 350

  2. Place chicken breast between two sheets of plastic wrap (a ziplock bag will work as well)

  3. Using a meat tenerizer beat your chicken into thin pieces

  4. Line the bottom of your 8×8 glass dish with beaten chicken and salt and pepper to taste

  5. Drizzle 1/2 cup of the tomato sauce over chicken and sprinkle oregano on top

  6. Add diced onion and mushrooms.

  7. Cover with the other 1/2 cup tomato sauce

  8. Top with pepperoni and cover with tin foil

  9. Bake in the oven for 30 minutes

    Time may vary depending on thin your chicken is.

Modifications

  • Primal option: add full-fat cheese of your choice or goat cheese.
  • Paleo option: add nutritional yeast for a ‘cheesy’ flavor.
