Hi, Mama! Last weeks cry for help got my hamster wheel spinning as I executed another one pan 30-minute meal; Chicken Pizza Casserole.

If you are missing pizza, this is definitely a dish to throw together when the craving overwhelms you, but cheating on your diet this week is out of the question.

I’ll be completely honest with you; I leave one meal a week open on my meal plan for an ‘oops meal.’ It took me a long time to realize one cookie or one nasty slice of Dominoes pizza would not kill me or set me back. {Well, other than the grain bloat and sugar headache the next day, like some kind of hangover}.

If you are just starting out eating Paleo or Primal, I do not suggest doing this until you are fully aware of your trigger foods and the cravings for these offenders have subsided.

Also, since I’m being honest here, no Paleo meal taste like the ‘real’ thing. It can come close {and a lot of time tastes better} but don’t expect a Chicago style pizza to come out of the oven.

Just like the pizza joint down the street, there are several toppings to choose from, and I highly you construct your Chicken Pizza Casserole to your family’s likings.

A Paleo 30-Minute One Pan Meal

8x8 Glass Baking Dish

  • 14 oz Chicken Tenders
  • 1 Cup Tomato Sauce - divided
  • 1 Small Onion - diced
  • 3 oz Mushrooms - diced
  • 9 Slices Pepperoni
  • 1/2 TSP Oregano
  • Salt and Pepper to taste


  1. Preheat oven to 350.

  2. Line the bottom of your 8x8 glass dish with chicken tenders. Salt and pepper to taste.

  3. Drizzle 1/2 cup of the tomato sauce over chicken. Sprinkle oregano on top.

  4. Add diced onion and mushrooms. Cover with the other 1/2 cup tomato sauce.

  5. Top with pepperoni and cover with tin foil.

  6. Bake in the oven for 30 minutes.

  • Replace chicken tenders with two chicken breasts by using a meat tenderizer to thin them out.
  • Primal option: add full-fat cheese of your choice or goat cheese.
  • Paleo option: add nutritional yeast for a 'cheesy' flavor.
