I’m not sure where you live, but here in southeastern Wisconsin, it is COLD! Brrrrr!

The winter coats, boots, hats, gloves, and snow pants are officially out for the season. While many hate the cold winter months, I tend to enjoy them. (Minus the cold part). I get extra cuddles from my boys, I have an excuse to be lazy (haha, who am I kidding…), and I can usually be found in the kitchen wearing my sweatpants and slippers stirring up delicious recipes such as this dairy-free Paleo Carrot Ginger Soup.

Homemade dairy-free Carrot Ginger Soup that is Paleo AND easy to make. Great for lunch on a cold winter day or for a family dinner.

Ingredients

Time needed: 1 hour and 5 minutes.

How to Make Dairy Free Paleo Ginger Carrot Soup

  1. In a medium stock pot place all your prepared ingredients in and bring to a boil.

  2. Cover and simmer on low for one hour.

  3. Remove from heat and let cool.

  4. Add soup contents into a food processor and blend until smooth and creamy. (About 60 seconds).

Tips & Tricks

  • Garnish with green onions or chives
  • I used chicken bone broth for this recipe but feel free to use beef or even a vegetable broth or stock to make it a vegan soup. Do note this may change the flavor a bit.
  • If you do not have a food processor any blender will work. Blend time may vary based on blender used.
