I am always looking for new breakfast ideas that are easy to make and can easily be grabbed on the go like these Breakfast Avocado Egg Boats.

When I first started dating my now husband, it was normal for him to spend ten to fourteen dollars on breakfast and lunch every day.

The frugal girlfriend that I was, put an end to that shortly after marriage. So, now the frugal wife that I am, makes sure he has breakfast and a lunch to take to work and dinner is cooked when he gets home.

You may laugh at this, but I honestly love prepping, baking, and cooking meals for my family. Besides my kids, I lack in the hobby department.

The Avocado

The avocado is often called a super-food. Which is no surprise as it offers a lot of super health benefits!

First, I want to clear up any confusion… an avocado is a fruit! While most fruits are full of carbohydrates the avocado provides a healthy amount of fats. Making the avocado one of the most unique fruits around.

Avocados are high in fiber, vitamins K, B, E, C, and also contain more potassium than a banana. They help aid in the digestion of plant-based vitamins and minerals and also have been known to lower cholesterol levels.

Talk about a super-food! With so many benefits we should all find ways to eat an avocado each day.

Ingredients

  • 1 Avocado
  • 2 Eggs

Time needed: 25 minutes.

How to Make Paleo Breakfast Avocado Egg Boats

  1. Preheat oven to 350.

  2. Wash the outside of your avocado(s) and pat dry.

  3. Cut avocado(s) in half.

  4. Remove seed.

  5. Skim some avocado meat out of each halved avocado(s) with a spoon.

    You’ll want to skim enough to fit an large egg.

  6. Place avocado(s) into a large muffin pan.

    This will prevent the avocado(s) from rolling over. If you do not have a large muffin pan you can get creative with other kitchen cookware. My favorite muffin pan can be found at Amazon: https://amzn.to/2CaCjON

  7. Crack open one egg per avocado half.

  8. Salt and pepper to taste.

  9. Bake for 15-20 minutes depending how well done you like your eggs.

Breakfast Avocado Egg Boats

Ingredients

  • 1 Avocado
  • 2 Eggs

Instructions

  1. Preheat oven to 425.
  2. Line a baking sheet with tin foil and grease where your avocado will lay. (This will prevent the foil from sticking to the outer skin). Or use a large muffin pan to prevent the avocado from falling onto its side.

  3. Slice avocado in half.

  4. Remove the seed and some of the avocado meat from both sides. (Enough to fit an egg).

  5. Place avocados onto prepared baking sheet or muffin pan and crack one egg into each half.
  6. Salt and pepper to taste.
  7. Carefully place the baking sheet or muffin pan into the oven.

  8. Bake for 14-17 minutes.

Recipe Notes

  • Optional: top with green onions and bacon bits or your choice of topping.
