Hi, Mama! I know you love bacon, so I paired two of my favorite foods together to make this amazing just can’t have one Bacon Wrapped Pineapple Bites.

This weekend we are attending my nieces third birthday which is a Hawaiian (Moana) themed party. Knowing my family, everything from the decorations to the food will be somewhat tropical in nature.

When you think of parties there’s always the standard staples; fruit tray, vegetable platter, spinach dip, some sort of protein, and cake… lots of cake.

I wanted to contribute something other than a birthday present and my super whiny children to the party, so being a Hawaiian themed birthday, these Bacon Wrapped Pineapple Bites will fit right in. I mean, what screams Hawaiian more than bacon and pineapple?

Hopefully, I didn’t offend anyone there.

I served these bad boys up for dinner last night (yes; I ditched the salad for bacon – don’t judge) and they were G-O-N-E. I’m thinking come Saturday a double batch is in order since my husband will be attending my niece’s Hawaiian themed party as well.

Bacon Wrapped Pineapple Bites

Homemade Bacon Wrapped Pineapple Bites that are Paleo AND easy to make. Great dish to pass at any event or switch up tonight’s dinner!

Ingredients

Time needed: 30 minutes.

How to Make Paleo Bacon Wrapped Pineapple Bites

  1. Soak 16-18 toothpicks in a small bowl of water.

  2. Preheat oven to 425.

  3. Line a baking sheet with tin foil and place an oven-safe wire rack on top.

  4. Cut pineapple into 1×1 inch pieces and place into a medium-sized bowl.

  5. Add coconut sugar and coconut aminos and give a good stir until pineapple chunks are evenly coated.

  6. Cut bacon down the middle.

  7. Take one piece of pineapple at a time and wrap each piece with bacon. Drive a toothpick through to hold the bacon on.

  8. Place on wire rack and bake in the middle of the oven for 18 minutes.

    Turn broiler on high for 2-3 minutes for crispier bacon.

  9. Let your bacon wrapped pineapple bites cool a bit before platting.

  10. Serve with a side of Tessemae’s BBQ Sauce.

Tips & Tricks

  • Tin Foil is used for easy clean-up purposes only.
  • For a less sweet taste omit coconut sugar and aminos.
  • Make sure to watch your Bacon Wrapped Pineapple Bites when the broilers on carefully so they don’t burn or catch fire.
